Paleo Ice Cream

This is a great way to enjoy “soft serve ice cream” with your friends and family.  It only takes about 3 minutes to make.  What do you do with your almost over ripe bananas?  My suggestion is to peel them [don’t freeze them with peel on like I first did because the peel won’t come off!  I never claimed to be a genius.  This is why by blog is named the “Imperfect” diet.  Place your peeled, very ripe, bananas into a freezer zip lock bag and freeze for later use.

Now to make the ice cream!  This recipe is for one serving.

Ingredients:

1 frozen banana

splash of cold canned coconut milk

1 tsp. honey (optional, I don’t use it because its too sweet for me if I do)

fruit (optional, you can add it after the ice cream is mixed or on top as a garnish)

almonds, cashews, or walnuts crushed (you can add it after the ice cream is mixed or on top as a garnish)

In a food processor break up your frozen banana and pulse a couple times to chop up the banana,

Add your splash of coconut milk a little at a time until its smooth, you will have to stop processing and push down the ‘ice cream’ from the sides a few times, if you add too much coconut milk it will become to watery more like a smoothie which isn’t bad either!

Process until smooth and scoop!
