Paleo Coconut Chicken Bites with Dipping Sauces

 

For the Chicken:

1/8 cup almond flour

1/4 to 1/2 cup finely ground coconut

2 eggs

1 lb chicken breast cut thin and cubed

1/2 cup cooking oil [to cook the chicken in]

Directions for chicken:

In one bowl whisk the eggs.  In a separate bowl combine the almond flour and coconut.  Dredge the chicken bites in the egg mixture then in the coconut mixture, place the chicken in the hot oil to cook on med heat until golden brown.

For the French Fry Dipping Sauce [Red]:

1/4 cup mayo

1/8 cup catchup

2 tbls white vinegar

Combine all ingredients with a whisk and serve.
For the Avocado Dipping Sauce [green]:

1 tbls mayo

1 avocado mashed

1 tbls sour cream

onion and garlic powder to taste

salt and pepper to taste

Combine all ingredients with a whisk and serve.
