[slightly frozen blueberries with crème sauce]
1 pint fresh blueberries
2 egg white slightly beaten
1 cup and 2 tablespoons of milk or cream
2 tablespoons of honey
Pinch of salt [optional]
2 teaspoons sugar
Freeze the blueberries on a plate or baking sheet in the freezer in a single layer. While the berries are freezing, combine the egg whites and milk in a pan on the stovetop, bring to just under a boil, whisking all the while, let it simmer for 5 min, then add the honey, sugar and salt. After a minute or two, strain the mixture into a bowl. Pour the mixture into a pitcher and chill; it will thicken when it chills. Pour the cooled sweet cream over the frozen berries.
