Brazilian Cheese Bread

Brazilian Cheese Bread

1/2 C Olive Oil
1/3 C Water
1/3 C Coconut Milk
1 tsp Salt
2 C tapioca flour
2 tsp minced garlic
2/3 C grated Parmesan Cheese
2 beaten eggs

Preheat oven to 375 degrees F.  Pour olive oil, water, milk, and salt into a large saucepan and place over high heat.  When the mixture comes to a boil remove it from the heat immediately.  Stir in the tapioca flour and garlic and mix until smooth.  Set aside to rest for 10 to 15 minutes.  (do not skip this step if the mixture is too hot it will curdle the eggs when you add them in the next step).

Stir in the cheese and egg into the tapioca mixture until well combined.  The mixture will look chunky like cottage cheese.  Drop rounded, ¼ cup-sized balls of the mixture onto an ungreased baking sheet.  Bake in a preheated oven until the tops are lightly browned about 10 to 15 minutes.

Makes 6 biscuits.  I actually have nutrition values for this (per biscuit)!
